This peaceful Benedictine abbey, nestled above the Lauquet River, offers a glimpse into medieval monastic life and is believed to be the birthplace of sparkling wine in the 16th century. Head west to Limoux, a lively town 15km by car, known for its relaxed pace, riverside markets, and its claim to fame – Blanquette de Limoux, the oldest sparkling wine in the world.
